toasted muesli
Ingredients:
3 cups (300g) rolled oats
1/3 cup (30g) desiccated coconut
1/3 cup (30g) wheat germ
2 tablespoons sunflower seeds
2 tablespoons sesame seeds
1/3 cup (50g) chopped almonds
50g butter
2 tablespoons oil
3 tablespoons honey
1/3 cup (60g) chopped dried apricots
1/3 cup (30g) chopped dried apples
1/2 cup (60g) sultanas
Method:
1. Preheat the oven to moderate 180 degrees C (350
degrees F). Mix the oats, coconut, wheat germ, seeds and almonds in a
baking dish.
2. Put the butter, oil and honey in a pan and stir over low heat until melted
and warmed through.
3. Pour into the baking dish and stir to coat the dry ingredients. Bake for 45
minutes, stirring well every 10 minutes.
4. Leave until cold, then stir in the fruit. Keep in an airtight container for
up to 4 weeks.
